Since 1995 companies, involved in the food production, processing and distribution, have to comply with a food safety plan, based on HACCP*.
Such a plan describes the procedures that must be followed to exclude to the maximum any hazards for the required food safety. The entrepeneur is compelled to work along these rules in order to produce food in a safe manner.
Private individuals and companies who offer food on markets, fairs and (open air) events also must work in accordance with a food safety plan. Such a plan may be
formulated by the entrepeneur himself, but an approved ready-to-use plan can also be obtained from the appropriate business-organisation. Such a ready-to-use plan is called a “hygienic code”. Therein are described all the requirements that must be fulfilled to supply the customers with food that is guaranteed safe and of good quality.
